Creamy Milk Soup Recipe

Creamy Milk Soup Recipe:

  • 2 tablespoons butter
  • 1 onion, finely chopped
  • 2 carrots, peeled and diced
  • 2 potatoes, peeled and diced
  • 3 cups milk (whole or 2%)
  • 3 cups vegetable or chicken broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • 1/4 teaspoon ground nutmeg
  • Fresh chives or parsley for garnish

  1. In a large pot, melt butter over medium heat. Add chopped onions and diced carrots. Sauté until the vegetables are softened.

  2. Add diced potatoes to the pot and continue cooking for an additional 5 minutes, stirring occasionally.

  3. Pour in the milk and vegetable or chicken broth. Bring the mixture to a simmer and let it cook until the potatoes are tender, about 15-20 minutes.

  4. Use an immersion blender to puree the soup until smooth. If you don't have an immersion blender, carefully transfer the soup in batches to a blender and blend until smooth. Remember to let the soup cool slightly before blending.

  5. Return the pureed soup to the pot over low heat. Stir in heavy cream, ground nutmeg, salt, and pepper. Adjust the seasoning to taste.

  6. Heat the soup until it's warmed through but avoid boiling to prevent curdling.

  7. Serve the creamy milk soup hot, garnished with fresh chives or parsley.

Enjoy this velvety and comforting creamy milk soup!
